Whew, I’ve been so busy I haven’t had time to update you guys on one of my favorite dishes!
I’ve always thought alfredo sauce was just cheese sauce….it turns out it’s a lot more delicious than that.
There’s whipping cream, and other stuff I can’t remember right now. But it is sooooo good. It’s definitely a little heavier than say pasta and marinara, but it fills you up so much quicker and really satisfies your appetite.
I loved it, my husband loved it, I’m sure other people would have loved it if we made enough to share.
Btw, if you’re wondering, yes, I did have to google how to spell “fettuccine.”
This chocolate mousse is not for non chocolate lovers. I’m obsessed with chocolate. My husband buys me one of those XL Hershey’s bars pretty much once a week. My favorite flavor of ice cream is Ben and Jerry’s Chocolate Therapy. Any I’m naming my firstborn Hershey. Okay, the last one is a lie, but you get the point.
This mousse was too chocolatey for me! I put in the correct amount asked for and everything!
Nevertheless, I loved the texture and how it was light yet dense at the same time. My husband made several jokes about me cooking a moose for dessert. It was funny the first 15 times he said it…. 🙂
Strawberry Smoothie/Almond and Poppy Seed Muffin
These muffins were easy and great! I felt semi-healthy because of the almonds included. Will for sure be making again!
I love easy recipes like this because they’re a little confidence booster and make me feel like I sort of know what I’m doing.
This strawberry smoothie was also super easy. Only 3 ingredients!
I loved it because I usually make smoothies with ice. I like the texture and the temperature it helps keep the smoothie.
I used frozen fruit and it was a great substitute for ice. It kept the smoothie cold while giving it the texture I love.
I used frozen bananas and strawberries and it made the smoothie turn out suuuuper bubble gum pink!
My meatballs looked a little sad when they came out of the oven. I didn’t have an onion to add to the dish so there was too much liquid put into the meat.
They were still delicious. I also didn’t have bread crumbs so I toasted some slices really quick and tossed them in. It seemed to work out okay!
Omg y’all. My pasta was an interesting experience to make. I will never, I repeat never, make homemade pasta without a pasta maker again.
The pasta was too sticky and I couldn’t keep it from sticking to itself. I had to cut with a pizza cutter. Every piece was uneven. It was just a mess. You can tell in the picture that the noodles are all different sizes. Whoops!
It wasn’t terrible to eat, however, just terrible to make.
Triple Berry Oatmeal Muesli
Chicken and Spinach Stuffed Shells
Ever since I’ve heard of muesli, I’ve been wondering what it is. Is it cereal? Some version of a panini? Apparently its milk, yogurt, and oats. Who knew?
I didn’t have blueberries for this dish and all the fruits I used were frozen. The idea still came across though! The oat/almond part of this dish was great, but dry and the fruits added perfect moisture and juiciness to complete this dish. I’m anxious to try it again with different kinds of fruits!
I’m still drooling thinking about the chicken and spinach stuffed shells. I LOVE pasta and this is like an even fancier version. The ricotta cheese added so much creaminess to the dish.
My only regret is that I didn’t add more pasta sauce to the dish. I have a giant jar of it so I had to guess how much to add since this recipe calls for a regular sized jar.
My husband loved it so much and I can’t wait to make it again!

But seriously. Enough veggies already. I’m feeling a little TOO healthy. Time to scarf down a chocolate bar. (You think I’m kidding)
The husband wasn’t too crazy about it because of his hatred of onions. I thought it was great. I thought I hated peas, but it turns out they’re kind of delicious! I’m digging the whole spaghetti with no sauce thing. I feel like an ~adult~.
I couldn’t use zucchini for this dish because I used all of my supply last night. I’m all zucchini’d out anyway.
Also, I had a chance for redemption from my carrot disaster last night and I’m very pleased to announce that my carrots were fully cooked! Progress!

I’m ready for MEAT. This dish was great and is an easy go-to meal during the week, but I want a little spice! Good thing tomorrow is going to be Sweet and Tangy Short Ribs!!!!!!!!!! And a slow cooker meal!!!!!!!!!!

This one was so easy and included one of my favorites: avocados!
Parmesan cheese was a perfect topping. We only had large flakes of it, but still delicious! I love love love cooked tomatoes. It’s one of the foods my picky self has learned to embrace on this cooking journey.
My husband loved this dish so I know it’s a keeper!
