Past Few Days!

I didn’t realize it would be this hard to keep up with this blog once school started. It’s my last year of “studentdom” so I just have to keep telling myself, “I think I can, I think I can, I think I can.”

This week was very……varied. I’ll give you the super quick run-down:


Cheese Enchiladas: LOVE. They’re cheesy, gooey, delicious. Home run.

Red Beans and Rice: Swing and a miss. I’m just not a bean-girl. The texture kills it for me. I’ll pick around the beans and go for the rice though!

Slow-cooker Chicken Chow Mein. Not what I expected. It was good! But when I think of chow mien, I think of cheap, greasy, mall food courts and soggy noodles. Apparently that’s NOT what chow mean is. They’re crunchy and salty. Delicious! But not what I was expecting.

Panfried Fish Fillets: Easy, semi-delicious. Looking back, I wish I’d squirted a lemon on top or something to bring out the flavors. It was all very muted. I made a honey butter sauce that Betty Crocker recommended and poured it on top. I didn’t end up eating a whole lot of it, but I can’t wait to try to make it again.

Crab Cakes: I should rename mine to crap cakes because these were a fail. I tried to include my best one and my worst one in the picture, but in reality, all of them looked like the worst one. I just got a good angle on the other. They all fell apart and I’m not actually a fan of imitation crab meat it turns out.

Gingersnaps: I wanted to make these to usher in the fall. It worked! These were so good. They stayed soft until I finally finished off the batch and reminded me of gingerbread cookies.

Parmesan Orzo and Meatballs: Easy and delicious. I saved some to take as lunch this week. I love orzo and I get excited when I get to use it in recipes. The tomatoes were a perfect addition!

Beef with Bow Tie Pasta/Chocolate Brownies

I’m drooling thinking about this beef. In fact, it’s going to be my lunch for this next week. I used a sirloin steak as the “beef” part of the dish and let me tell you, it add sooooo much depth and flavor. I LOVE steak so tossing it in to one of my favorite dishes (pasta) made me a happy camper.

I also loved that I didn’t use pasta sauce for this dish. I sorta made my own version of it. It worked and tasted delicious.

Let me tell you, it’s REALLY good as leftovers.

The only not-so-great-of-a-cook moment I had was when I was cooking the steaks. I don’t think I cut them into small enough pieces because it took awhile for the insides to cook as much as the outside.

I also used vegetable broth since I had an open container fro a recipe a few weeks back. I don’t think it tasted any different…..

Sad day. I forgot to take a picture of these brownies before I completely devoured them. Let that be proof of how delicious they were though.

I also forgot how much fun it is to lick the brownie spoon.

My usual go-to brownie recipe is Betty Crocker’s boxed variety, but this was equally delicious though not quite as moist. I think that was user-error.

I’m not usually a walnuts-in-brownies kind of girl either, but I went for it in the name of ~trying new things~. Not bad! I actually enjoyed it!

Almond Poppy Seed Muffin/Strawberry Smoothie/Meatballs/Homemade Pasta

These muffins were easy and great! I felt semi-healthy because of the almonds included. Will for sure be making again!

I love easy recipes like this because they’re a little confidence booster and make me feel like I sort of know what I’m doing.

This strawberry smoothie was also super easy. Only 3 ingredients!

I loved it because I usually make smoothies with ice. I like the texture and the temperature it helps keep the smoothie.

I used frozen fruit and it was a great substitute for ice. It kept the smoothie cold while giving it the texture I love.

I used frozen bananas and strawberries and it made the smoothie turn out suuuuper bubble gum pink!

My meatballs looked a little sad when they came out of the oven. I didn’t have an onion to add to the dish so there was too much liquid put into the meat.

They were still delicious. I also didn’t have bread crumbs so I toasted some slices really quick and tossed them in. It seemed to work out okay!

Omg y’all. My pasta was an interesting experience to make. I will never, I repeat never, make homemade pasta without a pasta maker again.

The pasta was too sticky and I couldn’t keep it from sticking to itself. I had to cut with a pizza cutter. Every piece was uneven. It was just a mess. You can tell in the picture that the noodles are all different sizes. Whoops!

It wasn’t terrible to eat, however, just terrible to make.

Oh-so-easy Beef Burritos

Another success!

I’m enjoying this small, seemingly insignificant victories.

This recipe was so stinking easy and simple.

I really only had to cook one thing and that was the beef.

Believe it or not……I’ve never eaten beans before……I know, I know, I’m pathetic. But I’m also pathetically picky! I’m determined to become more of an adult now that I’m in a new phase of my life. One of the first steps is to start eating beans. Baby steps!!

The best thing about this recipe is that it is so versatile. You can put anything you want on the burrito! Swap out chicken for beef, add a little rice, add some salsa (like I did), switch out tomatoes for corn, you name it! I will ABSOLUTELY be cooking this again when I need a quick, easy, go-to meal.
