Orange and Dill Pan-Seared Tuna/Confetti Brown Rice

Orange juice haters, reconsider this dish. I thought it was going to be disgusting. I’m not a fan of orange juice. It’s just too tangy for my tastes. I was afraid the sauce would ruin the tuna. Nevertheless I poured it over the tuna.




It was GOOD. The added butter and onion downplayed the flavor of the orange juice a LOT. It still clearly had an orangey taste, but it was much more mild and paired really well with the tuna.

My only pitfall was I had to defrost the tuna and in doing so, I accidentally cooked the corners a little bit. Still delicious!

This confetti brown rice is exactly what it sounds like. It’s a party in the pan AND in your mouth.

I didn’t have broccoli so I tossed in a bag of frozen onions and various bell peppers. It worked! I bet this recipe would be really easy to modify by adding in whatever vegetables are currently in my fridge.

I’d never had brown rice before and I am pretty apathetic towards it. It was good. But now I have a bunch of brown rice I have to figure out what to do with.

Also, yay for not turning out mushy rice! One of the few times that’s happened!
