Chicken Enchiladas/Guacamole

The picky version of me is getting her butt kicked with all these incredible Mexican dishes. My Mexican restaurant order of choice is what’s known as a Steven Special (literally just rice and chicken smothered in queso).

I know what I like and I’m scared to try new things. But let me tell you, these enchiladas were amazing.

Granted, they’re probably not exactly the same as what I’d get if I ordered them at a restaurant, but I think that’s why I liked them so much. They weren’t overly greasy or soggy. They might have been if the recipe had called for queso (sadly, it didn’t).

I made 6 for my husband and I but we barely made it through our first before we had to stop. They were so filling! AND so easy!

Holy Guacamole!!!! I’m sorry, I had to.

I’m a huge huge fan of avocados. Typical millennial. I know. Btw, I despise that label.

Anyway, back to the most delicious food on the planet. I love love love guacamole and I normally eat it with just avocado, salt, and lime. This recipe called for a few more ingredients (I didn’t add the tomatoes).

While the recipe doesn’t specify what kind of salt to use, kosher is most reached for when making guacamole (I’m a guac pro).

After adding in generous amounts of salt to the dish, we WENT TO TOWN on these bad boys.

I almost forgot to take a picture, I was so excited!
