Crepes/Mimosa/Artichoke-Spinach Lasagna

Alright alright. Crepes are another repeat recipe. But I’ve made them because I love them and I haven’t fully grasped the concept of making a regular pancake correctly. Plus, you can’t have too much practice on a good dish.

I didn’t have fresh fruit, so I just filled them with syrup and the poured even more syrup on tom. Just call me Buddy the Elf!

I have been looking forward to this recipe alllll week! I’ve been dying to try a mimosa. You get to day drink AND it tastes like juice!? It was……just as I expected. I was hoping to have some divine revelation like: Now you’re a sophisticated woman who eats mimosas and brunches! But I was just like: Now you’re a normal person who drinks spiked juice.

That’s all it tasted like… juice. I also discovered that I’m not really a fan of mango juice and now I have a gallon I have to somehow drink (The recipe in my book calls for half orange, half mango juice). Wahh

This was the big letdown of the evening. They should rename it to arti-CHOKE spinach lasagna. I aptly renamed my dish artichoke spinach dip surprise. The surprise being lasagna noodles buried inside.

The really sad part of this is that I had invited my sisters over to my parents house and I was so excited to get to show off my new found cooking skills!

The first mishap of the evening happened when my mom’s not-at-all-frustrating double oven shut off immediately after I put the lasagna in without me realizing it. It “cooked” for 40 minutes and when I took it out, I realized the oven wasn’t on the whole time. *facepalm* I tried to see the humor and laugh it off. Dinner was postponed 45 minutes.

Finally, everything is in order, the lasagna is on the table I’m just serving the first portion, and it’s SOUP! The whole thing is soupy and creamy and does NOT stay together like a lasagna should!

I can’t blame my girl betty. She had nothing to do with this.

My sister’s informed me that when you use frozen spinach, you have to really drain it on a towel and get allllll the water out. So essentially, my lasagna was 50% spinach water.

Good thing us girls go with the flow. One of my sisters grabbed a bag of tortilla chips from the pantry and we dug into our spinach artichoke dip surprise!
