I was excited to finally get to try a baked breakfast dish! I chose this one first because Fall is my favorite season and the apples, cinnamon, oatmeal combination made me feel like I’m in the middle of November and not hot hot July. (Serious Fall, can you speed it up a bit?)
This oatmeal was so good. Of course, you know if it has oatmeal and cinnamon, its going to taste amazing. The apples added a nice, sweet crunch.
I even didn’t mind the raisins! I can’t honestly say I’m a big fan of raisins. The texture is just weird to me, but they worked in this oatmeal! I have to find other dishes to put them in since I bought so many!
Y’all, these Cajun Smothered Pork Chops were the BOMB. I love pork chops in general. I can even remember the first time I ever ate pork chops. Of course, you know me, they were accompanied by an ample side of ketchup! But I’ve matured since then….. hah.
The seasoning for this dish is described as “extra spicy” so I was expecting something unbearable to eat without drinking whole cups of milk in between, but it wasn’t like that at all! The “spiciness” was more of a smoky flavor. My mouth burned more eating the pulled pork from the other day than eating this dish.
Plus, I got to add my favorite side…..tomatoes! The only sad part was, these were canned tomatoes and, let me tell you, my “newly refined” palette CAN taste the difference. I’m not complaining though!
Everything about this dish was incredible. The savoriness of the seasoning to the juiciness of the pork chops. It was all delicious.
I ended up with three pork chops and my husband and I split the last one after we’d had our fill! This will definitely be a repeat recipe!
